A worthy subject and not a bad story. Some things were not covered but I expect you did not intend to be comprehensive.

It is sad that the U.S. has rules about eating horses. The is an over population of wild horses that are causing environmental damage in the west. Many of them should be slaughtered for food but can't be because the laws don't allow it, and the law can't be changed because the public is ignorant.

Bears, foxes, wolves, coyotes, mountain lions and other native American animals that are often hunted for their fur or because they are a nuisance are rarely eaten, I believe because they don't taste good. The prohibition on raising and eating domesticated dogs and cats is essentially racist, it is a cultural taboo that should not be codified as law. It is an example of a "Populist" law lots of people like the law but it is bad law.
