I guess it is a learned skill and it does depend on the type of electric stove. My mother had an electric stove and for the most part I have always had electric stoves and ovens. I have never had a problem cooking anything I have tried. I have and my parents had gas grills and charcoal grills. My parents grew up with wood stoves, try regulating the heat of the cook top on a wood stove. I have cooked on wood stoves, you have to know where the heat flows as there are hot spots and warm spots. I have also cooked over an open fire but prefer to let it burn down to charcoal if the food is not in a pan. An open fire will soot up a pan and make for a lot of work cleaning the outside if you care.
Yes, I agree gas stoves are better for the cook and until we eliminate fossil fuels not much worse for the environment. It does make sense to prevent gas appliance installations going forward if we are going to phase out natural gas to prevent Catastrophic Climate Change.
