I have a hard time thinking of Potato Chips as an UPF. I worked on a potato farm that raised potatoes to be processed into french fries and potato chips. They are both just sliced potatoes that are fried and salted. I still make both from fresh potatoes at home. I don't salt them, I like them better without salt and maybe that is the magic that makes the OK, I don't know.

I think the UPF label is not helpful. More important is just properly balancing your diet. Almost certainly a chocolate bar is UPF but I think a quality chocolate has a place in one's diet. I think fried potatoes should be a rare treat. It is not so much how processed something is but what constitutes the end product. Something that is only slightly processed but ends up being only simple carbs, fat and salt is not a great choice. Consider eating mostly simple cuts of meat and less processed vegetables. The vegies need not be fresh, frozen will do, canned not good too much salt and preservatives. You chose tuna with olive oil, why not tuna in water.

Processed or not processed what matters is what is in the product when you eat it.
