I think you are actually missing some of the bigger factors in the Republicans capturing a larger share of the Latino vote. Patriarchy, Misogyny, Religion and Machismo.

Remember roughly half (maybe more than half) of Latino voters are men.

At their core, I think Latinos are more conservative than other Americans.
