When I went off to college my Mom gave me a “Po Folks” cookbook. It was even cheap, spiral bound. I think she got it by making a charitable contribution to some cause. Very few of the meals in that book had meat. Eating well on a tight budget is hard but possible if you have the time and knowledge. You can even eat well on a budget and eat vegan as well. For almost my whole life, fresh fruit was always free in season. Apples, Oranges, Grapefruit, Pears, Blueberries, Blackberries…you had to go pick them yourself most of the time but I have had people give me bags of citrus fruit. I know the seasons are short but it makes them special.
Oprah and others of her ilk know that they are catering to the privileged or those who aspire to privilege. The idea that her audience should eat one vegan meal a day is just funny.
It would be such a sacrifice to have a lunch of tea with a pita stuffed with humus and slices of cucumber and bell pepper. Maybe we need to add grapes or an orange.
How about breakfast of coffee with almond milk and banana bread. Oh, maybe we should add some fresh fruit.
Or
Dinner, red wine and Ratatouille with French bread. Fresh sorbet for desert with a fresh fruit garnish.
I used to have a garden and would grow everything I needed for Ratatouille.
Oh, the suffering of having to eat vegan one meal a day.
Oh, wait, I remembered another favorite, Basil/pine nut pesto on whole wheat pasta but I guess you would have to use a cheese substitute to be truly vegan ;-)
